French Onion Soup

There's no soup that can compete in my opinion.

Ready to make my absolute favourite soup at home!


French onion soup is delicious for a variety of reasons. The caramelization of the onions brings out their natural sweetness and creates a deep, rich flavor. The combination of beef and chicken broth gives the soup a savory and satisfying taste, while the sherry and thyme add a subtle depth of flavor. The Gruyere cheese, which is melted on top of the soup, provides a creamy and nutty taste that complements the broth perfectly. The toasted bread also adds a nice texture to the soup and makes it more filling. The combination of all these ingredients creates a well-balanced and satisfying dish that is both comforting and delicious.

  • 6 large onions, thinly sliced

  • 3 cloves of garlic, minced

  • 4 tablespoons butter

  • 2 tablespoons olive oil

  • 4 cups beef broth

  • 2 cups chicken broth

  • 1/4 cup dry sherry

  • 1 teaspoon thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 1 baguette, sliced and toasted

  • 2 cups grated Gruyere cheese or mozzarella (my personal favorite)

Instructions:

  1. In a large pot or Dutch oven, melt the butter and olive oil over medium heat. Add the onions and garlic, and cook until the onions are caramelized, about 30 minutes.

  2. Add the beef broth, chicken broth, sherry, thyme, bay leaf, salt and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

  3. Preheat your broiler.

  4. Ladle the soup into oven-safe bowls, and top each bowl with a slice of toasted baguette and a generous amount of grated Gruyere cheese.

  5. Place the bowls on a baking sheet and broil until the cheese is melted and bubbly, about 2-3 minutes.

  6. Serve hot and enjoy!
